I have been loving the citrus in my Brewer’s Organics Box.

It’s been grapefruits, oranges, mandarins, tangerines, lemons, limes and clementines.  It’s all been delicious.  But more often than not, I’m just having my citrus as a snack or a side to meal.  It was time to come up with a fun way to incorporate it into a meal.

This salad not only contains orange slices but the salad dressing is made from orange too.  The flavors are bright and this salad is full of nutrition.  Can you say hello to Vitamin C?  With spinach and oranges, you’ll get a big dose of vitamin C in this salad.

If you’re not a meat eater, then substitute the chicken with grilled tempeh.

Ingredients:

Salad
3 Cups baby spinach
2 Chicken Breasts either grilled or oven baked
1 orange, peeled and separated into section
1/3 cup pitted and chopped dates
1/2 avocado sliced
1/4 cup almonds rough chopped

Dressing
1 orange, peeled
1 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
1 tsp dried tarragon
salt and pepper to taste

Instructions:

For the salad: Grab a big bowl and put your salad ingredients together.  Toss the ingredients in the bowl.

For the dressing: Place all the ingredients in a food processor.  Blend the ingredients until smooth.
