This recipe is a fun variation on how you can cook sweet potatoes on the grill or even over a camp fire.

Sweet potatoes are a great source of safely digestible carbohydrates.  Looking for a plant source of Vitamin A?  Sweet potatoes are your sure bet to get Vitamin A, along with Vitamin C, Vitamin B6, magnesium, potassium and a host of antioxidants.

Plus they are sweet.  Who doesn’t love that!

Keep reading for a fun way to grill up some sweet potato cubes.

Ingredients:

1 to 2 sweet potatoes – peeled and chopped up into 1 inch cubes
1 tablespoon of butter or coconut oil
1 tsp of cinnamon
Sea salt to taste

Instructions:

Take a piece of aluminum foil.  Place your sweet potato cubes on the aluminum foil.  Take the tablespoon of butter or coconut oil and divide it up into smaller portions to place over the sweet potato chunks.  Sprinkle your teaspoon of cinnamon and sea salt on top.  Wrap up the aluminum foil and then cover it with a second sheet of aluminum foil.

Place the foil packet of sweet potato chunks over direct heat for 15 to 18 minutes.  Then flip it over for another 15 to 18 minutes.  At this time you can either remove it from the grill or just place it off to the side to stay warm.

Open the packet and grab some sweet potato chunks to enjoy as a side for your dinner.
