Summer is here and we want some cool treats!  Plus, the kids are home.  “Can I have a snack” is heard multiple times everyday.

So what’s the solution for a sweet treat that still has a nutritional punch?

Chocolate Almond Butter Banana Chunks 

This frozen treat has the texture and taste of an ice cream treat.  With a small serving size, you can enjoy one without feeling the guilt of downing hundreds of calories.


4 bananas
1/4 cup Coconut milk (plus 2 extra tbsp)
1 Cup Chocolate Chips (I used the Enjoy Life Brand)
Smooth Almond Butter
Sea Salt (Optional)

Grab a cookie sheet and place parchment on top of it.

Cut the bananas into 1/4 inch discs.


Place one layer of banana discs on the parchment paper.  Spoon some almond butter onto the banana disc.  Then top it with another banana disc.  Once you’ve made and stacked all the banana discs with almond butter, put them in the freezer for 30 minutes.

While your bananas are in the freezer, make the chocolate coating.


Put the chocolate chips into a glass bowl with the coconut milk.  Using a sauce pan with about 2 inches of water, place the glass bowl on top to create a double boiler. As the chocolate begins to melt, stir the mixture until it becomes a smooth chocolate sauce.  At this point, you may need to add more coconut milk if the chocolate sauce is too thick.  You don’t want to spread it on the banana chunks.  You want to dip them and coat them.

After 30 minutes, take out the banana chunks that are in the freezer.  Use tongs to grab the chunks and dunk them into the chocolate mixture.  Once the banana chunk is coated, place back on the parchment paper.

At this point, you can sprinkle a little bit of sea salt on all of the chunks if you like the sweet/salty combo.

When all the chocolate banana chunks are covered, it’s time to put them back into the freezer for 4 hours.  At this point, they will be totally frozen.  Store the Chocolate Almond Butter Banana Chunks in container in your freezer.  When it’s time to have a cool treat, you know where to go.
