I had my parents over for breakfast last week and I decided to make a frittata. It’s a delicious and healthy breakfast to serve when you have company over. This is also my go to make at the beginning of the week for a quick and easy reheated breakfast during the week.
12 large eggs
1/2 cups coconut milk, full fat
6 slices bacon, chopped
1/2 cup chopped black olives
4 cups swiss charged, chopped
1/8 tsp sea salt
1/8 tsp black pepper, to taste
Preheat oven to 350F.
Whisk the eggs with the coconut milk in a large bowl. Add in the chopped black olives and set aside.
Cook your bacon in a skillet until it’s crisp. Remove bacon from skillet and set aside.
Add the swiss chard to the skillet and cook until just wilted. Add the bacon back into the skillet. Pour the egg mixture into the skillet and season with salt and pepper.
Bake for 15-20 minutes, until eggs are set.
