The egg and bacon cup was a delicious breakfast!  I made these on a Sunday morning and had a few extra to heat up during the week.

Ingredients:
6 pieces of bacon
8 Eggs
Seasoning of choice – I used a Wild Tree Garlic and Pepper blend
Salt
Pepper

Heat your oven to 375 degrees.  In the mean time, warm up a frying pan with some butter in it.  Partially fry the 6 pieces of bacon for about 2 minutes on each side.  When the bacon is done and cooled, put a piece of bacon in each compartment of a cupcake pan.  The bacon should be in a circle forming the base of the cup.

Take two eggs and whisk them together.  Add the seasoning, salt and pepper to the beaten eggs.  Evenly distribute the beaten egg mixture into the the bacon circles in the cupcake pan.  Next, you’ll crack an egg on top of the egg mixture in each compartment.

Put the cupcake pan in the oven for 20 minutes or until the egg yolk on top has changed color.

My husband had his egg and bacon cups with cheese on top.  If you would like to add cheese, add some at 18 minutes so that it will melt on top.

You could also top with guacamole or avocado slices when it is done cooking.
