Ingredients:

1 tbsp coconut oil or ghee
1 lb ground beef
½ head of cauliflower
2 tsp chili powder
½ tsp cumin
½ tsp garlic powder
½ cup tomato sauce
salt and pepper
3 bell peppers cut in half and seeds removed

Heat your oven to 350 degrees.

Make cauliflower rice by taking half the head of cauliflower and cutting into chunks. Place the cauliflower chunks in your food processor and pulse until you get it to a rice like consistency. If you don’t have a food processor use a cheese grater. Shred until the cauliflower on the small grate side to make “rice”.

In a pan, brown the ground beef over medium heat. Once the pink is gone, add in the cauliflower rice. Cook for 6 minutes. Give it a stir every couple minutes.

Now it’s time to add in the spices and the tomato sauce. Give everything a good stir to make sure it’s all mixed up.

Place the peppers in a glass baking dish cut side up. Fill up the peppers with your meat mixture. Bake uncovered for 20 to 25 minutes so that the peppers get soft.

Have some fun with different toppings. Try avocado chunks, guacamole, or salsa.
