Here is another recipe from the grand re-opening.

I love blended vegetable soups because of the smooth texture.  I use a hand blender, but you can use a food processor or high end blender.  Enjoy!

To make the soup you will need:
2 tablespoons palm oil, coconut oil, butter or ghee
2 cloves minced garlic
1 yellow onion chopped
2-3 stalks of broccoli cut into small florets
1 32 oz of chicken stock
1/2 teaspoon salt
1/4 tsp ground black pepper
5-7 strips of bacon chopped

Here’s how it’s done.  Heat the oil in a large soup pot and add garlic and onion.  Saute for 3 to 5 minutes then add the broccoli to the pot and cook for another 5 minutes.  Next, cover broccoli with chicken broth and salt and pepper. Bring to a boil. If you pan fry bacon, do that now otherwise do it in the oven before you even start.  After the pot comes to a boil, let the soup simmer on medium to high heat for 5 minutes.  Then add the bacon and continue to simmer for another 10 minutes.  When it is done, blend with a hand blender.  If you don’t have a hand blender, let it cool for a bit than blend it in small portions.  When serving you can serve with crumbled bacon on top.
