Here is the delicious Apple Cider Pork Roast that Coach Rachel made!  Enjoy!

 

Ingredients:

1 Pork Shoulder (bone in optional)

2 TBSP Coconut Oil

1 Sweet Potato

½ Large Onion

1 Granny Smith Apple

Salt and Pepper

1 tsp nutmeg

½ gallon Apple Cider

¼ cup distilled white vinegar (can substitute apple cider vinegar)

Instructions:

  1. Season pork with salt and pepper to taste. Sear pork shoulder in frying pan in coconut oil until brown on all sides
  2. Chop sweet potato into 1 1/2 inch squares, core apple and chop into 1-1/2 to 2 inch pieces, chop onion
  3. Place some sweet potato and apple pieces on the bottom of the slow cooker and pork on top. Place the rest of the vegetables into the crock pot.
  4. Add ¼ cup vinegar, and then 2 cups of water for every 1 cup of cider until the pot is full or the meat is covered.  Add nutmeg, salt, and pepper to taste. Cover and cook for 4 hrs on high or 6 hrs on low, depending on crock pot settings.
